Coffee Cherries are a fruit that grow on trees cultivated by farmers. Like all fruits and vegetables there is a harvest season, and coffee-producing countries have only one specific harvest season each year. Once the coffee is picked from the tree, pulped, processed, dried, bagged and made ready for worldly transport, it begins the inevitable process of slow decline, losing quality with the passage of time. At Cibo our coffees are offered only while fresh and seasonal to reveal the vibrancy that both the farmer and the roaster know is possible.
